Protein extraction
Protein excreting - precipitating proteins from solutions by adding a concentrated salt solution. The process is the result of a disorder of the solvate and aggregation of protein molecules as a result of easier contact between polar groups of neighboring molecules. Salts of light metal (eg KCl) or ammonium, for example ammonium sulphate, are used for the salting. This process is a gel transition (coagulation), does not affect the protein structure, also quaternary and tertiary (does not cause denaturation) and is reversible.
The protein is easiest to salve at a pH equal to its isoelectric point.
