Fontina

Fontina or fr. Fontine - a type of Italian cheese that is made from cow's milk. This cheese is classified as rennet, ripening and semi-hard cheese. The taste of Fontina cheese is very delicate. After 2 months maturation, the cheese is suitable for grinding on the grater. Fontina cheese is used as a condiment for many different dishes.

It is traditionally produced in the Aosta Valley; The history of its production dates back to the Middle Ages. Currently protected by European Union law - in 1996 he was granted the status of Protected Designation of Origin (POD). Importantly, do not confuse the Fontino PDO cheese with the commercial name Fontal cheese, with cheese produced in the Valley of Aosta has nothing to do except a similar name.
