Capillary water - water that occurs in fine pores, crevices and capillaries of products, regardless of the force of gravity, since the forces of surface tension are stronger than it is. This water is subject to capillary phenomena.
Capillary waters occur in the aeration zone in pores and crevices of capillary dimensions. They move under the influence of cohesion and adhesion forces, forming a zone of capillary elevation at the boundary of the saturation zone and the aeration zone. Capillary waters are subject to gravity, pressure transfer, dissolving, freezing at temperatures slightly below 0 ° C. The distinction is: proper capillary water - not separated from free water in the saturation zone and capillary water suspended - forming lenses in the aerosol zone.
