invertase


Invertase (β-fructofuranosidase, β-fructosidase, saccharase, EC 3.2.1.26) - hydrolyzate class and glycosidase subclass that catalyses hydrolysis of fructofuranoside (+) - sucrose to give (+) - glucose and (-) -fruktozy. The process is accompanied by a change in the polarization direction of polarized polarized light from positive to negative. "inversion of sucrose", which is the source of the enzyme name.

The optimum pH of the invertase is about 5. It occurs mainly in plant cells where it is bound to the cell wall. It is also produced by bees, hydrolyzing sucrose during the formation of honey. Commercially available products are obtained from yeast.
