Sencha (Japanese 煎茶) - a kind of Japanese green tea prepared without grinding leaves. Like other Japanese teas, it is generally stronger in taste than its Chinese counterparts.
Depending on the species, it is brewed with water at 60-80 ° C for 1-3 minutes. It should be noted that this is a "multi-infusion" tea, which can be repeated several times, usually up to 3 times. With subsequent brewing, the water temperature and brewing time are increased. A special type of sencha is gyokuro, which is not subject to the previously described method of brewing. Gyokuro very often with water at even lower temperatures (50-60 ° C). There are also much more dried tea than in the case of ordinary sencha. The first brew usually takes about 2 minutes. The second brewing takes only 30 seconds. For subsequent brews we increase the time by about one minute. Gyokuro can burn 4 and even 5 times (depending on the species and quality of the tea).
